TRASFORMATION

The transformation of the grapes into wine is the most delicate process of the chain and, at the same time, is the one that more than any other has known development compared to traditional methods.

Scarabelli wines is different from the others in that it is the result of a careful attempt to bring together tradition and innovation, the past with the future and popular culture with healthy drinking.

In fact, the working of the grapes occurs entirely within the company and is followed by a doctor in winemaking, as well as by the company’s owners, so as to maintain total control of every phase.

The result is a modern wine but one that preserves all the marvellous fruits of its land: a healthy wine, such as that that after a long day’s work was opened and put on the table by Francesco Scarabelli – the agricultural company’s founder – at the dawn of the 20th century.

CÁ AL FURNEL

Vinification and aging

Wine obtained by selected “Barbera” and “Bonarda” grapes in the traditional proportions of 60% and 40% originating from the ancient company vineyards, and better exposed. Vinified according to the classic tradition of the Piacenza area, it is only sold beginning in the month of September of the year after harvesting in order to allow the indispensable aging in the bottle. 

Level of alcohol: 13.5% vol.
Type of bottle: Bordolese with shoulder 75 cl

Organoleptic characteristics

Clear, with intense red colour with maroon reflections.

A tense and characteristic slightly vinous perfume, with hints of red berries and spicy nuances.

On the palate it is dry, warm, full bodied, calm, rightly tannic and harmonious.

Pairings
This red wine from Piacenza is an inseparable companion to entrees with smallgoods, important first courses, roast meats, game, braised meats and aged cheeses.

Serving temperature: 18/20° C.

Early opening is recommended to favour its oxygenation for perfect exaltation of the perfumes and flavours.

Vinification and aging

Wine for “meditation” obtained from grapes of the "Malvasia di Candia aromatica"

variety from the company’s vineyards. Carefully picked by hand in small wooden boxes and left to dry in a well aired place until the end of December and are then pressed softly followed by aging in barrels for 12 months before bottling.

Organoleptic characteristics

Clear, intense yellow colour with amber hues,

Intense aromatic and fruity perfume with hints of figs,

Candied fruit and honey.

In the mouth is it sweet and velvety. 

Pairings

This wine is ideal with sweets and especially dark chocolate and also ice cream.

We also recommend tasting it with spicy cheeses and especially with tender cheeses such as Gorgonzola or blue cheeses.

Vinification and aging:

Table wine obtained from an expert blend of native grapes,

amongst which stand out aromatic varieties that give the wine its unmistakable fragrances and all from the company’s vineyards.

Vinified with soft press and with short contact with the skins. 

Natural fermentation in autoclave: it is bottled in the spring after the harvest, after natural fermentation. 

Level of alcohol: 12,5% vol.

Organoleptic characteristics

Clear, of an intense pink colour, delicate, fragrant perfume with hints of strawberries and small red fruits.

In the mouth it is harmonious and fresh.
